Lemon Herb Chicken

A refreshing and aromatic chicken dish perfect for summer. The combination of lemon and herbs gives the chicken a light and zesty flavor.

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 lemon, juiced and zested

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

Instructions:

Season chicken breasts with salt and pepper


In the Instant Pot, select saut mode and heat olive oil


Add minced garlic and saut until fragrant


Add chicken breasts and brown on both sides


Add lemon juice, lemon zest, oregano, and thyme


Close the lid, set the valve to sealing, and pressure cook on high for 8 minutes


Once done, do a quick pressure release and carefully open the lid


Serve hot, garnished with fresh herbs if desired
