Instructions:Line and dust a 9 x 9-inch 23 x 23 cm square baking pan with powdered sugar and parchment paper Mix the gelatin and 1/2 cup of cold water together in a small bowl Let it bloom for ten minutes or so, or until it solidifies Combine the strawberry puree, 1/4 cup water, corn syrup, granulated sugar, and salt in a saucepan over medium heat Stir the mixture until a candy thermometer registers 240F 115C Take the strawberry syrup off the heat source and mix in the bloomed gelatin until it dissolves completely Beat the strawberry mixture on high speed for 10 to 15 minutes, or until it thickens and becomes frothy and the bowl is no longer warm to the touch, using a stand mixer or a hand mixer Add the vanilla extract at this point Using a spatula to smooth the top, pour the marshmallow mixture into the pan that has been prepared To set, sprinkle powdered sugar over the top and leave it at room temperature for at least four hours, or overnight Once set, cut the marshmallows into the shapes you want with a knife or powdered sugar-dusted cookie cutters To keep the cut marshmallows from sticking, dust them with extra powdered sugar Savor your homemade marshmallows with strawberries!
